ICKY STICKY DATE PUDDING
(alias CHERRY'S DATE CAKE JUST LIKE PETER'S MOTHER'S)
Preparation time: 45 minutes
Baking time: 40 minutes

Ingredients

Into med/large saucepan put:
Bring to boil.
|
500g UNCHOPPED DATES
2 LEVEL TSPN CARB SODA
600ml WATER
|
Turn off heat and add:
Stir until melted.
|
125g DICED BUTTER
2 TBLSPN GOLDEN SYRUP
2 TBLSPN TREACLE
|
When cool enough to incorporate the next ingredients,
add:
Stir in well.
|
4 LIGHTLY BEATEN EGGS
1 TSPN VANILLA ESSENCE
450g SELF RAISING FLOUR
|
Pour into greased baking dish and bake in
mod oven approx 40 minutes until done.
Leave
in pan approx 5 minutes before turning onto cake
cooler.

CUSTARD FOR SERVING
(this is Cherry's less rich/economical adaption of
the original. You end up with a caramel flavoured custard)
Preparation time: 15 minutes

Ingredients
|
In med saucepan, over low heat, dissolve then
cook for 3 minutes
|
100g BUTTER
2 tblspn DARK BROWN SUGAR
|
In separate bowl make a paste with
|
1 tblspn CUSTARD POWDER
1 tblspn CORNFLOUR
approx 4 tblspn MILK
|
To the mix in saucepan, slowly stir in whilst
heating
|
500ml MILK
|
Then pour whilst stirring into the paste mix,
return to heat and stir until boiled and thickened.

|
HOT TOFFEE SAUCE
(this was the original recipe, which of course Rob
prefers!)

In a med saucepan over low heat dissolve:

200g BUTTER
400g BROWN SUGAR
|
Add:
|
300ml CREAM
|
Simmer 5 minutes, take off heat and add
|
1 tspn VANILLA ESS
|
